Stella Ortega: Stella created the deliciously spicy and complex Chicken a la Diabla. Zesty Cacique® chorizo livened up the chicken, and reconstituted dried chiles brought out those traditional, old-world flavors, while fresh Queso Fresco balanced the spiciness perfectly.
Leah Lyon: Leahs Shrimp Rajas Al Carbon Panela Tostaditos impressed us with her creative idea to use fried Panela rounds as the tostada base. She topped off her Shrimp Tostadito with an elegant Crema Mexicana Agria, avocado and bacon garnish.
Helena Giesea: Cactus, also known as nopales, is a staple in Mexican cuisine, and Helenas creative spin on this traditional ingredient caught our eye. Helenas Cactus Frittata provided a wonderful vegetarian option, highlighting robust Cotija cheese and authentic, mild Panela cheese.
Susan Ten Pas:
Roast Squash w/ Pear Soup & Chorizo Meatballs. The title of this recipe alone intrigued us and testing it proved that risky ingredients and creativity can be very rewarding. Susan used Crema Mexicana and Crema Mexicana Agria to thicken and enrich her soup, while her use of zesty Chorizo brought to life the subtle flavors of the squash and pears.
