Chipotle Shrimp with Rice

Ingredients

  • 1 cup Cacique® Crema Mexicana

  • 1 package (10 oz.) Cacique® Manchego, shredded

  • 1 lb. shrimp, cooked, peeled and deveined

  • ½ cup milk

  • 1 (7 oz.) can chipotle chiles in adobo

  • Cilantro, chopped (for garnish)

  • Salt to taste

Preparation Method
Preheat oven to 375°F.

Blend milk, Crema Mexicana and chipotle chilies.

Layer cooked shrimp in baking dish then cover with cheese, chipotle and cream mixture. Bake 15-20 minutes until cheese begins to brown around edges. Serve over rice and sprinkle with cilantro.
