Spinach and Panela Omelet
- ¾ package (6 oz.) Cacique® Panela, sliced
- 6 eggs
- 2 handfuls of fresh spinach, chopped, and stems removed
- 6 mushrooms, quartered
Make omelet by whisking 2 eggs together per serving. Once egg has cooked on one side, place mushrooms first, then spinach followed by cheese. Fold over and cook for additional 3-4 minutes for cheese to melt. Spinach leaves will wilt a bit.
