Spinach and Panela Omelet

Ingredients

  • ¾ package (6 oz.)  Cacique® Panela, sliced

  • 6 eggs

  • 2 handfuls of fresh spinach, chopped, and stems removed

  • 6 mushrooms, quartered

Preparation Method
Make omelet by whisking 2 eggs together per serving. Once egg has cooked on one side, place mushrooms first, then spinach followed by cheese. Fold over and cook for additional 3-4 minutes for cheese to melt. Spinach leaves will wilt a bit.
