I am learning that eating better doesn’t mean eating foods that are bland and boring. I have been looking for tasty gluten free lunch and dinner options so I have been mixing up ingredients to form some of my best dishes. I love avocados, cheese and tuna, so I thought, “well why not?”
Let me tell you that my mini Avocado Tuna bites were a great success around here. They are super easy to make and you can fry them up with coconut oil to make them a little better. I used almond meal instead of breadcrumbs and voila, you have a treat even the kids will enjoy! My little one did. These are perfect for lunch, snacks or dinner. You can even serve them up at parties as an appetizer. Plus if you are feeling adventurous, you can add some diced serrano chiles to spice things up a bit.

HOW TO MAKE IT
- In a medium bowl place drained tuna, crema mexicana, cotija cheese, garlic salt and pepper. Mix until well blended.
- Cut avocado into cubes and place into tuna mixture. Fold together carefully without mashing the avocados. Form the tuna avocado mixture in to balls and roll in the almond flour/meal mixture until covered completely. Set aside.
- Place coconut oil in a pan on medium heat. Place tuna balls into hot oil and cook until crisp and golden brown on all sides. Remove from oil and place on a paper towel covered dish to drain excess oil. Let cool and enjoy.
