Yes! The photo pictured above is what I call my entertaining ‘guests’ salad. I can make this salad with a few ingredients that I usually already have in my house. It comes together in a matter of minutes and is always met with oooooohs and awwwws. People think it takes some great feat to pulling this together when in actuality it only takes 2 Cacique® ingredients and 5 other household staples. I guess you could say it’s all in the crema/dressing. I used Cacique’s Crema Salvadoreña as the base for my dressing and it makes a world of difference. The combo of the fried zucchini, avocado, pepita cilantro dressing and light sprinkles of cotija will carry your tastebuds to the next universe. Not to sound crazy or anything but it’s true. Let me give you a little tip….The next time you are having a tribe of people over for dinner or need a great salad for a potluck, this is your answer. Enjoy!

HOW TO MAKE IT
- Place cilantro, pepitas, and crema in a blender and blend until smooth. Set to the side. Place a frying pan over a medium high flame and pour in olive oil. Allow to get hot. Fry zucchini rounds until golden 10 to 12 minutes. Turn over once halfway through cooking time. Allow zucchini to cool. On a large serving platter pour pepita cilantro dressing and smear across plate. Overlap zucchini and avocado over dressing. Sprinkle with cotija cheese. Garnish with cilantro and pepitas if you wish.
