Hey Football Fans, let me hear you scream! In Texas, football is an obsession. It is literally always football Season in Texas. We Texans breathe football and I am along for the ride. As a newlywed my first big event as a hostess was a football party for 15, diehard football fans. I was so nervous I stayed up all night prepping my dishes, decorating and arranging the couches that by halftime I was snoozing on the couch. I heard everyone loved the food when I finally woke up. I decided that day If I was going to continue to host footballs parties I would have to learn to chill out, not stress, arm myself with a an arsenal of solid recipes, plan ahead and enjoy my own party.
Football Party Tip – Plan ahead. Make a guest list and stick to it. You don’t want to overwhelm yourself. Send an online invitation and invite people to bring an appetizer; you can never have too many appetizers.
Over the years I am happy to state that I have become quite the little party planner and have perfected my football party routine. Football parties should be casual, relaxed, but should always, always include touchdown dance worthy comida, so when Cacique contacted me to be one of the first to try their new Mexican-style Shredded cheeses and share one of my favorite football recipes I was thrilled to share. Football Party Tip – Stock up. Head out to the grocery store a few days ahead and buy all essential, ice, plates, cups, paper towels, garbage bags (for clean up), beverages and ice – yes I included ice twice, you can never have enough.

This choriqueso is the one recipe that I always make an appearance at my football parties, people cannot get enough of it. It’s just that good and between us this recipe is super easy to make, your guests will think you slaved over the stove all morning. Trust me this will be a winner at your party. It all starts with sautéed onion and crumbled Cacique® chorizo. A few spoons of a bright salsa fresco, a thick layer of cheese and you are ready to broil a few minutes y listo! Ready to serve with warm flour tortillas or tortilla chips.
Football Party Tip – Set up early. Rearrange the couches, extra chairs and pillow so viewing the game is comfy. Set up the table, buffet style with plates, utensils, cups and ice bucket. Place beverages in fridge to chill, if grilling- clean grates and prep charcoal or wood.
If serving a large crowd double or triple the recipe, it is really fail proof. Serve in individual dishes as shown here or use a casserole pan to make a large serving. Prep ahead and make the chorizo mixture a few days in advance and refrigerate in a covered dish until ready to assemble. WHAT YOU NEED
- 1 large onion, diced
- 2 medium tomatoes, diced
- 1 cup cilantro, washed
- 1 tablespoon vegetable oil
- 2 (10 oz) packages of Cacique® Pork Chorizo
- 1 (7 oz) Cacique® Four Quesos Blend shredded cheese
- Tortillas or tortilla chips
HOW TO MAKE IT
- In a bowl combine all but 3 tablespoons of onion, diced tomatoes and cilantro; stir to combine. Set aside until ready to use.
- Preheat broiler. Heat oil in a nonstick pan over medium heat. Add 3 tablespoons dice onions and chorizo to pan, cook, breaking up with spoon until fully cooked, about 5-7 minutes.
- With a slotted spoon divide chorizo-onion mixture into four individual serving dishes, top each dish with 1 tablespoon of salsa and equally divide queso blend over the salsa. Broil until cheese is melted, about 5 minutes. Serve warm with tortillas and remaining salsa.
