The Cacique® Quesadilla Cook-Off fiesta continues! Today, we’re celebrating with delicious and creative recipes that will satisfy both carnivores and vegetarians at your Cinco de Mayo party. These bloggers were inspired by classic flavors from their favorite “taquería” restaurants while living in Mexico, pushing this round of the Quesadilla Cook-Off to a whole new level of Auténtico. So without further ado, let’s get this party started!

Up first, we have Hermelinda Martinez from Mexico in My Kitchen. She created a decadent Oaxaca Steak Quesadilla that pays homage to her son’s favorite meal while living in Monterrey, Mexico. It’s made with finely-diced fajita, sirloin or rib eye steak and is held together with one of the finest melting cheeses in the world: Cacique’s Oaxaca cheese. Next up, we have Adriana Martin from Adriana’s Best Recipes. She created not 1…not 2…but 3 different recipes to enjoy at her Cinco de Mayo Quesadilla party! “La Gringa” is a Grilled Pineapple and Pork Quesadilla that has a kick of pastor spices with Cacique® Queso Fresco to create a smooth and balanced flavor. To quote Adriana, “The marriage between the Cacique® cheese and the pastor pineapple flavors is a party in your mouth.”
