One of the reasons I welcome cooler weather is because it’s the perfect time to serve cozy comfort food meals. And one-pot stews, melting cheese and crusty bread all mean comfort food!

Some people think of comfort foods as something soothing when they’re sad or upset. For others, it’s something that might evoke a nostalgic or sentimental feeling.
And then there’s a group of foods that seem to have created their own special category called “Comfort Foods.” These are typically foods that roast, simmer, or braise for a while. Typically served warm or hot — think saucy and creamy with warming spices and melting cheese. “Soups and Stews” might as well change their category name to Comfort Foods, as they can be all of these things at once. Foods in this category warm us up simply make us feel good.

This recipe came to be one rainy, gray day when my whole family was inside bundled in blankets. The Cacique® Beef Chorizo is hearty, warmly spiced and covered with luscious Cacique® Enchilado Cheese. The cheese is a comfort food in and of itself! It’s strongly flavored with hints of paprika – I could eat it all day and – if it’s melted – all week!
