Loaded potatoes are a family favorite. My husband is a meat and potato guy so he enjoys when I make any potato recipe. He particularly enjoys this recipe because it’s oozing with melted cheese and loaded with Pork Chorizo. My daughter on the other hand, loves this recipe for the Crema Mexicana. She is not a picky eater, but she does have a preference for the crema topping and keeps asking for more crema in order to finish her potato. I do not blame her, the crema adds a cool touch to the warm potato and the potato tastes wonderfully drenched in the crema.

You can build each potato ahead of time or let everyone add as much of the toppings as they’ll like. See below how I like to build these:

Top baked potato with Oaxaca cheese.

Bake for 5 more minutes to melt the cheese.

Cover with cooked chorizo.

Drizzle with Crema Mexicana and garnish with cilantro.

Chorizo Loaded Potatoes

Start to finish: 1 hour

  1. Preheat oven to 400 degrees F.
  2. Prick the potatoes with a fork.
  3. Place each potato on the microwave for 3 minutes at a time.
  4. Move potatoes to a baking sheet and drizzle them with olive oil and salt.
  5. Bake for 30 minutes.
  6. While potatoes are baking, cook chorizo on a sauté pan over medium heat letting the chorizo release its oils and cook through.Once potatoes are out of the oven carefully make a cut in the middle and press the sides to create a pocket.
  7. Fill the pocket with shredded Oaxaca cheese and place potatoes in the oven again for 5 more minutes or until cheese has melted.
  8. Top potatoes with 1 to 2 tablespoons of chorizo.
  9. Drizzle with Crema Mexicana and garnish with cilantro.
  10. Enjoy!
