Cilantro-Lime Dip

When I plan a large party I always serve food that is not only delicious but also convenient, allowing me to enjoy the celebrations as well. I love make-ahead options that require only to be baked, or heated the day of. Cheese trays and dips are also perfect, as they can be served room temperature or even cold. They are easy to make and such crowd pleasers.
One of my favorite ways of serving cheese is with marinated and roasted veggies like peppers and mushrooms. A robust cheese like Cacique® Enchilado goes perfect paired with those veggies. Another idea is to pair milder cheese like Ranchero® Queso Fresco with fruits like kiwis, strawberries, pineapple or watermelon like on this recipe.
When it comes to dips the sky is the limit and the options are endless. I particularly love creamy dips and I find that the fresh buttery Crema Mexicana is an excellent choice to pair with popular Latin flavors like cilantro and lime or even in sweet dips like this Sweet Vanilla Dip.
This savory dip is one of my favorites because it only takes minutes to make, and goes well with almost everything: chips, fresh veggies, tortillas, and of course yuca fries.
To make yuca fries, just boil peeled cassava root and once tender cut into long sticks that you will then fry in hot oil.
Serve the golden fry yuca sticks with this wonderful dip and your guests will be asking for more. I also like to sprinkle Cotija cheese on top of the fries as well as in the dip for an added kick of flavor.

WHAT YOU NEED
- 1/2 cup Crema Mexicana Agria
- 1 cup rough chopped cilantro
- juice of 1/2 lime
- 1 garlic clove
- 1/8 teaspoon salt
HOW TO MAKE IT
- Add all the ingredients in a blender or food processor. Blend well for approximately 2 minutes. Serve cold or at room temperature.
