Classic Mexican Dishes Made Easy

I love seeing how Mexican food has become a staple in so many households across the U.S. and the world. Sharing my culture through food is my life’s work, so I love creating authentic, classic recipes that are accessible to even those who may not have lots of experience cooking Mexican cuisine. I am confident that all of these recipes will become family favorites in your home just as they are in mine.

Enchiladas are such a classic dish. I remember rolling them with my Abuela and Tias when I was a kid and they are so emblematic of Mexican lifestyle. Poblano chiles are also such a symbol of Mexico and they have a beautiful history behind them that is rooted in Puebla. This recipe uses Crema Mexicana, Queso Quesadilla and Ranchero Queso Fresco from Cacique®, so they are authentic, creamy, rich and always remind me of home. This is a great entry to Mexican cuisine. If you haven’t tried it out yet, this dish only takes 30 minutes to prepare, and is incredibly flavorful and perfect for leftovers.

Now if you like to throw fiestas at your house like I do, Chorizo Refried Beans Dip is the perfect item to have ready when guests arrive. One of my main hosting tips is that I always prep ahead of time and have something out for friends and family to snack on before the main dishes are completed. That way, you can have fun and be relaxed as the host. With easy to cook, delicious Chorizo and a creamy Crema Mexicana finish, Chorizo Refried Beans Dip is an amazing way to kick off any celebration with authentic Mexican flavor.

Baked Butternut Squash and Queso Fresco Flautas are a real crowd pleaser. These are crunchy, savory and surprisingly easy to make. Best of all, they’re sprinkled with delicious Cacique® Queso Fresco for a mild, creamy flavor that takes them to the next level. Even the kids can get involved when rolling the flautas. Just like I love passing on classic Mexican recipes far and wide, I love to have moments in the kitchen, teaching my son the techniques that my family taught me. That way, I can pass on the torch and share our family legacy through meaningful stories and recipes.
