We are approaching the last weeks of summer. Luckily, the weather is still ideal for grilling, eating outdoors and enjoying fresh and juicy foods. These summery and fun Grilled Watermelon Pizza Pops are low carb, quick, and easy to prepare. They are made from just watermelon, salami, basil, and both Cacique® Cotija Cheese and Cacique® Crema Mexicana, providing a lighter alternative to the traditional pizza. Serve them as an appetizer at your next get-together, a snack or as a healthier substitute for pizza!

HOW TO MAKE IT
- Preheat a cast-iron grill pan over medium-high heat. Once pan is hot, place the watermelon slice down and let it grill until grill marks are formed (about 4-5 minutes). Use tongs or a large spatula to flip the watermelon slice and let it grill for another 4-5 minutes. Remove watermelon to a cutting board or large plate and let rest for about 5-7 minutes.
- Top with salami and basil leaves, drizzle with Cacique® Crema Mexicana and sprinkle on the Cacique® Queso Cotija. Cut watermelon into 8 slices. Cut a small opening in the rind by piercing with the tip of a pairing knife and insert a Popsicle stick. Serve and enjoy!
