Summer is the perfect opportunity to spend time with friends and family and get out in the backyard and fire up the grill! I am an avid lover of grilling and am excited to share with you all my favorite recipes for this season’s cookouts. Above all, I like to get a little creative and do something that people may not be expecting when they come to my house.
I always suggest some quick starters, so your guests aren’t too hungry waiting for what’s to come. I love to incorporate bright, refreshing ingredients like mango to balance out delicious meats and cheeses, so I kick off my get-togethers with Grilled Cacique Panela with Mango Habanero Salsa. This fresh, spicy and light dish is great for those hot summer days. Next up, I like to make Grilled Corn Chorizo Sopes with Queso Fresco. Corn is such a grilling staple, and this is a fun, new twist on a classic. Plus, I remember making sopes with my abuela when I was growing up, so let the kids get involved on this one!
For the main dishes, I love to make some delicious tacos. This is also a bit unexpected, as many folks forget that tacos are pretty simple to make and a great way to mix up your BBQ menu. Sometimes, I just set up a taco station with all the ingredients and fix-ins for people to enjoy so it’s interactive. They can drizzle as much Cacique Crema as their heart desires and crumble their own Cacique Queso Fresco. Finally, the Grilled Tlayudas with Pork Barbacoa are great because you can have everything ready before your guests arrive. I’m all about having food prepped as much as possible so that you have time to spend with your friends and family.
