Whole Wheat Veggie Wraps

When I was a child, my favorite meal was anything that involved cheese. My mom would make me quesadillas for breakfast and cheese sandwiches for lunch. My younger son is the same way, but when I make school lunch for him, I like to sneak in as many vegetables as I can. That’s why I love making these veggie wraps.
I make them with whole-wheat tortillas, spinach and avocado, shaved carrots and, of course, Cacique® cheese. I use Cacique® Quesadilla and Manchego cheeses because they have so much flavor, that I don’t need to add any sauce or seasoning to the wrap. This lunch or snack is so simple and so delicious that I make them for my lunch, too (because, to be honest, anything with cheese is still my favorite meal!).
This recipe makes two tween boy servings, but it could be enough for three servings for smaller kids. If your kids don’t like spinach or carrots, use lettuce and tomato or cucumber.

WHAT YOU NEED
- 3 medium-sized whole-wheat tortillas
- 6 thin slices of Cacique® Manchego Cheese
- 6 thin slices of Cacique® Quesadilla cheese
- 1-cup spinach – washed and dried or from a ready to eat bag
- 1 carrot
- 1 ripe avocado
HOW TO MAKE IT
- Thinly slice cheese and set aside. Cut avocado in small pieces. Place tortillas on a plate and layer each tortilla with 2 slices of Manchego and then spinach. Grate carrot onto spinach layer. Layer each tortilla with 2 slices of Quesadilla cheese and avocado. Roll tortilla as firmly as possible and slice. Enjoy!
